While some folks really enjoy sauerkraut there's some that really don't like cabbage once it's fermented (aka me!). But I really enjoy fresh cabbage - especially coleslaw on pulled pork sandwiches. Last year my mother-in-law created an Apple Slaw that uses both apples and cabbage which we had a lot of both. It's definitely one of my favorite early fall treats! Cranberry Almond Apple Slaw Recipe
- shredded cabbage
- unpeeled, diced apples
- sliced almonds
- matchstick carrots
- Thinly sliced kale
- chopped fresh parsley
Use more or less of each according to your tastes. Everything is optional. You could also add in other things you like. Onions, broccoli, cauliflower, kohlrabi or radishes would be great. Use your imagination. Mix all together.
