Apple Cake Recipe

With apple season just starting - things are too busy around here just yet so I had some time to do a little baking. The first thing I made this season was an Apple Cake and it was so delicious! It reminded me of a pineapple upside down cake but with apples - so good!

Apple Cake Recipe


1 cup all purpose flour

1 teaspoon baking powder

1/8 teaspoon salt

1/2 cup (1 stick) salted butter, at room temperature

3/4 cup granulated sugar, plus a heaping tablespoon for sprinkling over cake

2 large eggs

1 teaspoon vanilla extract

3 tablespoons spiced rum

3 baking apples, peeled, cored and cut into cubes (3 1/2 to 4 cups chopped apples - I used paulareds and they were perfect!)

a couple pinches of cinnamon (optional)


  1. Preheat oven to 350-degrees F and set an oven rack in the middle position. Grease a 9-inch cake pan with butter or nonstick cooking spray.

  2. In a small bowl, whisk together the flour, baking powder and salt

  3. Using a handheld mixer or a stand mixer, cream the butter and granulated sugar, about 3 minutes. Add the eggs, one at a time, beating well and scraping down the sides of the bowl after each addition. Beat in the vanilla and rum. Add the flour mixture and mix on low speed until just combined. Using a rubber spatula, fold in the chopped apples.

  4. Scrape the batter into the prepared pan and even the top. Sprinkle evenly with 1 heaping tablespoon of granulated sugar and a few pinches of cinnamon. Bake for about 40 minutes or until the cake is golden and a toothpick inserted into the center comes out clean.

  5. Cake can be served warm or room temperature, plain or with lightly sweetened whipped cream or vanilla ice cream.
