Flavor: Fragrantly sweet with extremely tender, soft texture - almost like an apple-flavored pear. Great balance of sweet and hints of tart flavor. Does not keep - eat immediately. Browns quickly. Baking: This will bake down with bits remaining. Too soft to use in peeler/corer/slicer. Discovered in Chenango Valley, New York before 1850
